Freehand Stone Sharpening

Over the past 12+ years we have sharpened many... MANY Japanese knives on stones, and in doing so have mastered delicate nature that they often require. We use Shapton, Naniwa, and Nanohone for our sharpening progression up to 4000 grit, and will finish the edge on a flat leather strop loaded with 1 micron diamond emulsion. The results are simply unmatched.

If the knife you desire to be stone sharpened is in good condition with no damage and “near original” edge geometry, and is of a handcrafted nature with a high carbon or stainless version thereof, please select this service. 

*** Many Japanese knives from such international brands as Shun, Global, Miyabi, etc. are often just as good with our Standard Sharpening Service, which you can learn more about here. ***

Please note that this service is for sharpening the primary cutting edge only. Any abrasive work needed to be done on the secondary bevel, also referred to as thinning, will be performed on our belt grinder. You can read more about our thinning services here.
