Carter Cutlery is the brainchild of Murray Carter, a 17th-generation Yoshimoto bladesmith and ABS Master Bladesmith who honed his craft over 18 years in Japan before relocating to the U.S. in 2005.
As the only westerner to have ever received a formal title in Japan for the craft, Carter hand-forges high-performance knives using traditional Japanese techniques, like pine charcoal forging and rice straw annealing, with premium Hitachi White #1 and Aogami steels. Known for exceptional sharpness, edge retention, and ease of sharpening, his blades—ranging from kitchen gyutos to neck knives—reflect a fusion of heritage and precision. Since opening the world’s first Japanese Bladesmithing School in 2006, he’s trained apprentices and students globally, with some knives now crafted by his skilled “Muteki” team. Each piece, whether by Carter or his crew, carries the legacy of nearly 450 years of Yoshimoto tradition.
