Takeda / Fujiwara Standard Sharpening Service

Soshui Takeda is one of the many highly regarded smiths from Japan to the extent that his knives are considered a "must-have" for both the culinary and knife collecting enthusiast. The scandi type edges on his knives often prove a challenge for the end user to maintain, and so this service is for those looking to maintain the original scandi grind. If the original edge has been sharpened to oblivion we will recommend removing it and establishing the more traditional edge geometry.

If the original scandi grind is in good shape choose the option below labeled "Takeda STANDARD SERVICE" and your blade will be sharpened freehand on stones up to 4000 grit. Implementation of a small micro-bevel will be determined by the geometry and straightness of the edge. If removing the scandi, as in the case of a regrind, the service is performed on a grinder for thinning, with the final edge done freehand on stones.

Check out Ryan thinning a T. Fujiwara Denka Gyuto in the video below. He has done this countless times and has earned the reputation as the go-to knife sharpener for this particular service.
