Hinoura Knives are masterfully crafted by Tsukasa Hinoura and his son Mutsumi, a father-son team from Sanjo, Niigata Prefecture, Japan, carrying forward a family legacy that spans over 120 years since the Meiji era. 
Based in the historic Echigo region, famed for its 700-year blacksmithing tradition, they forge their blades using premium steels like Shirogami #2 and Aogami, often clad in stunning twisted Damascus patterns such as Enryu or Unryu. Known for their exceptional heat treatment, seamless fit-and-finish, and razor-sharp edges, highly sought Hinoura knives—like the Tsukasa and Ajikataya lines—reflect a blend of traditional hand-forging techniques and meticulous craftsmanship. Tsukasa, a third-generation smith who began in 1975, and Mutsumi, the fourth, uphold the family’s reputation for "honed beauty," creating durable, high-performing knives sought after by chefs worldwide.
