Collection: Nishida Knives
Daisuke Nishida is a master blacksmith from Kumamoto Prefecture on Japan’s Kyushu Island, where he has spent over two decades perfecting the craft of knife-making.
Beginning his journey at age 19, he apprenticed under a skilled forge smith, mastering traditional hammer-forging and the intricate "Warikomi" technique before establishing his own workshop in 2006. Known for working exclusively with Shirogami #1 (White Paper #1) steel, a challenging high-carbon material, he forges each blade from scratch, creating knives celebrated for their sharpness and durability. His creations, often featuring rustic kurouchi finishes and custom handles like walnut or cherry, reflect a deep commitment to preserving Japan’s fading handcraft traditions. Based in his Kumamoto workshop, Nishida produces both kitchen and hunting knives, blending ancient methods with a personal passion for quality that resonates with chefs and collectors alike. His solo craftsmanship—handling everything from forging to finishing—makes each piece a unique testament to his skill and dedication.
