Muneishi Knives, crafted by Muneishi Cutlery Mfg. in Tosa, Japan, have been a family tradition since 1955, now led by third-generation blacksmith Kosuke Muneishi.
Originally focused on forging tools for farming and forestry, the company expanded into kitchen knives under Kosuke’s leadership, specializing in Aogami #2 steel. Each blade is hand-forged using traditional techniques, often featuring a kurouchi finish and stainless or iron cladding for durability and ease of maintenance. Known for their excellent grinds, versatile profiles, and affordability, Muneishi knives appeal to both novice and seasoned knife enthusiasts who refuse to bargain between value and performance. The knives are celebrated for their sharpness, edge retention, and rustic aesthetic, reflecting Tosa’s rich blacksmithing heritage.
