Kobayashi Knives are the creation of Kei Kobayashi, a master sharpener turned blacksmith from Seki City, Japan, a historic hub of blade-making renowned for its samurai sword legacy.
Born in 1977, Kobayashi honed his craft sharpening knives for Seki’s top artisans before founding Kobayashi Hocho with his father, channeling decades of grinding expertise into crafting his own blades. Specializing in ultra-thin "laser" knives made from R2/SG2 powdered steel, his creations boast exceptional sharpness, precision, and a flawless fit-and-finish that reflect his meticulous attention to detail. Based in Gifu Prefecture, Kobayashi’s workshop produces these lightweight, high-performance blades—often with distinctive red-lacquered handles—celebrated by chefs for their cutting finesse and aesthetic beauty. What began as a sharpening service has evolved into a brand synonymous with modern Japanese craftsmanship, blending tradition with innovation.
