This is everything I was looking for in a paring knife. The workmanship is top rated, the balance ergonomics and over quality is outstanding. Could not be happier with this purchase and looking forward to using this pairing knife for years.

Whenever Ryan from District Cutlery first showed this radius platen in action, I knew I had to have one. I sharpen professionally and make the odd knife here and there, and this piece of equipment has revolutionized my workflow on repairing and refinishing Japanese and Western-style knives. The price is very reasonable for what you get, and you know you're supporting a small business. If you want to thin or grind knives with a flat face, give the Pro-Style Radius Platen a shot!

sharp out of the box. edge is straight. I own the petty from this same line. I bought that petty from a dif store, that store seems to mark up their tsunehisa stock by stamping their brand instead of tsunehisa. The price mark up is roughy 100usd added. I found this store with this Tsunehisa line. as far as I can tell the only difference is the brand on the front. I am not rich. I use these for work. Not terribly reactive. Compared to other knives I use that the internet claims to be highly reactive, these shiro 1 knives are moderately reactive...
I am diligent with my maintenance. During service I keep towels solely for drying cleaning. if I know i wont prep a bit or cut proteins I put knives in sayas
