The 210mm Tsunehisa AUS10 Damascus Gyuto with a Yo handle is everything I look for in a high-quality Japanese chef’s knife. Out of the box, it was razor-sharp, with a fine edge that glides effortlessly through vegetables, proteins, and herbs. The AUS10 steel offers excellent edge retention while still being easy to maintain, making it ideal for both professional use and serious home cooks.

The fit and finish are outstanding — the Damascus pattern is visually stunning without being overdone, and the Western-style handle is extremely comfortable for long prep sessions. The blade geometry strikes the perfect balance between thinness for precision cuts and enough heft for versatility in the kitchen.
