We met Tim Rowland of Rowland Cutlery at the 2024 Atlanta Bladeshow and were immediately impressed with his blade grinds. Tim is a retired chef and member of the Georgia Custom Knife Makers Guild. Follow him in IG @rowlandcutlery.
This 155mm kiritsuke-style serrated saw-tooth bread knife is made 80crv2 carbon steel heat treated to 61HRC. The blade has a full convex grind and a satin finish
The blade is fitted to an octagonal wa-style handle made of figured white oak, African blackwood
The best sharpening tools for Japanese knives are leather strops and fine whetstones
