The blades are damascus-clad VG10 high-carbon stainless steel manufactured by Yaxell in Seki City Japan.

The hammered pattern on the blade reduces the overall flat surface area which aids in preventing food from sticking to the blade.

I was promptly greeted by Warren

I was promptly greeted by Warren, who was working on something. I discussed purchasing a new chef knife plus getting three other knives sharpened. After some discussion, Warren facilitated an agreement resulting in me taking my new knife with me, leaving the other three, he would sharpen and mail, free of charge, to my home in West Virginia.

I was in Washington DC visiting my son. I had purcahsed a larger chef knife, my first ever, from District Culery, several years ago. I didn't want to get the knife sharped at home, so I brought the knife with me, with two other Cutco knives, to your shop to be sharpened. I am most pleased with your service
