Ginsan, also known as Gin3 or silver 3, is a fine semi-stainless steel made by Hitatchi. It is regarded for taking a very fine edge and is often used in single-bevel knives as an alternative to shirogami. Japanese kitchen knife makers often heat treat it to around ~61 but some go higher.
