Knives made with multiple layers of steel are commonly known as damascus steel knives. Most modern damascus steel knives have a hard steel in the middle laminated with multiple layers of softer steel on either side. When the blade is ground to an edge, the layers of steel are exposed to create a wavy or rippled surface. Laminating hard steel makes it more resistant to permanent damage when dropped.
