Handmade by our knifemaker Ryan Swanson, this chef knife was designed to be the workhorse in your kitchen.
The blade is made of AEBL high carbon stainless steel with a hammered surface texture. 5.75" edge length, 44mm tall from the heel to the spine, 1.74mm thickness. Heat-treated in house to ~61 HRC.
The handle is acrylic
Japanese chef knives are brittle and are designed for cutting soft tissue foods. High Carbon steel chef knives can rust if not kept dry.
